I live in Melbourne and have been buying this salmon at the Queen Victoria Market. Tasmanian salmon has been off my menu for many years; their farmed salmon industry has attracted significant criticism for its continued expansion and alleged environmental impact. Naturally, the dine-in menu changes constantly too, but you should always be able to get dry-aged sashimi and fish and chips (with “Heston-style” hand-cut potatoes and Coopers beer batter).
