Tucked unassumingly beneath an apartment building, ex-Kisume and Nobu chef Ken Ibuki is carrying on his father’s legacy with yakitori served every which way and a diverse selection of sake by the glass. The majestic figure featured in the branding – and neon sign in the window – is Congiu, reimagined as a lion, slurping noodles. Inside the no-frills space, accented by dark timber, there are just 19 seats and, while it’s now BYO-only, beer and sake are coming soon. Congiu lived in Japan for two years, which is where his ramen obsession started. “I was lucky to meet some old-school Japanese guys and they took me to all the best places,” he says. “I ate ramen everywhere, but I had to stop every now and then and sleep for 12 hours to digest.” Back in Melbourne, he couldn’t find ramen quite like what he experienced in Japan.
